What a treat this was! After numerous articles by leading travel magazines, including Country Inns, the Jackson House Inn & Restaurant is a well-known romantic retreat in Vermont.
As we were seated in the elegantly appointed dining room, Hildy & John would attend to our every need throughout dinner.
We started with the Crispy Soft Shell Crab with avocado, tomatoes & lime and the Jackson House Baby Greens with aged balsamic vinegar. Along with the first course came French bread and buttermilk-chive biscuits.

Next was the rhubarb sorbet to cleanse the palate. All the sorbets and ice cream served at the Inn are made in-house by Crissa, the Jackson House Inn's pastry chef.
Our second course was even better! Mike chose the Angus Beef Filet with celery root and artichoke gratin, grilled portabello mushroom. I chose the Pan Seared Muscovy Duck Breast with sweet corn pancakes and tangerine honey jus. The chef, Brendan, also sent out a sample of the truffle whipped potatoes and grilled asparagus for us to try.

The meal was so good and we enjoyed it tremendously......so it was no surprise that we didn't get much work done that night after dinner. We simply returned to our wonderful room and relaxed in the cool comfort of this fabulous Inn.
